It's been over a week since I visited Donna and Ernest Roth's Knopp branch family farm out on Navidad Road, and I'm still thinking about one of the conversations Donna and I had in one of their golf carts out in the breezy sun.
She made the comment that we as people are in the middle of a food revolution and I immediately agreed with her.
The Roths sell their organic vegetables in farmer's markets through Houston and Austin, and also sell directly to chefs and cooks in the area. They've noticed restaurants are always wanting something new and tasty to add to their menus, and the more obscure the ingredient, the better.
